Cake Base:
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 tsp baking powder

Pumpkin Filling:
  • 1 cup pumpkin purée not pie filling
  • 1/3 cup sugar
  • 1 large egg
  • 1/2 tsp cinnamon
  • 1/4 tsp ginger
  • 1/4 tsp nutmeg
  • 1/8 tsp cloves
  • 1/4 tsp salt
Crumble Topping:
  • 1/2 cup all-purpose flour
  • 1/4 cup sugar
  • 1/4 cup cold butter cubed
  • 1/4 cup chopped nuts optional
  • 1/2 tsp cinnamon

Method
 

  1. Preheat oven to 350°F (175°C). Grease an 8x8 inch baking pan.
  2. Make the cake base: In a mixing bowl, whisk together flour, sugar, baking powder, salt, and cinnamon. Spread evenly in the prepared pan.
  3. Prepare pumpkin filling: In a separate bowl, combine pumpkin purée, sugar, egg, cinnamon, ginger, nutmeg, cloves, and salt. Mix until smooth. Spread evenly over the cake base.
  4. Prepare crumble topping: In a small bowl, combine flour, sugar, and cinnamon. Cut in cold butter using a fork or fingers until mixture resembles coarse crumbs. Add nuts if desired. Sprinkle evenly over the pumpkin layer.
  5. Bake: Place in preheated oven for 35–40 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool: Allow cake to cool for 10 minutes before slicing. Serve warm or at room temperature.

Notes

  • Use pumpkin purée instead of pumpkin pie filling to control sweetness.
  • Balance spices to your taste; cinnamon and nutmeg provide warmth, ginger adds depth, and cloves/allspice bring aroma.
