  • 2 cups self rising flour

  • 2 larges eggs

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  2. Mash the ripe bananas in a large mixing bowl until mostly smooth.
  3. Stir in the melted butter, sugar, eggs, and vanilla extract until well combined.
  4. Gently fold in the self rising flour (and cinnamon, if using). Do not overmix.
  5. Pour the batter into the prepared loaf pan.
  6. Bake for 50–55 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack before slicing.

Notes

  • Use very ripe bananas with brown spots for the best sweetness and moisture.
  • Add-ins like chocolate chips, walnuts, or blueberries work beautifully.
