Method
- Pat the dorade dry with paper towels.
- Rub the fish with olive oil, garlic, salt, and pepper inside and out.
- Stuff the cavity with lemon slices and herbs.
- Heat oil in a skillet over medium-high. Place fish skin-side down; cook 5–6 minutes until golden.
- Flip carefully and cook another 4–5 minutes.
- Rest for 2 minutes, then serve with lemon juice and sides.
