Ingredients
  

  • 2 whole dorade (cleaned, scaled, gutted)
  • 3 tbsp extra-virgin olive oil
  • 2 cloves garlic, minced
  • 1 lemon, sliced
  • Fresh parsley, thyme, or rosemary
  • Sea salt, to taste
  • Freshly ground black pepper, to taste

  • 1 cast-iron or heavy skillet
  • Paper towels
  • Cooking tongs

Method
 

  1. Pat the dorade dry with paper towels.
  2. Rub the fish with olive oil, garlic, salt, and pepper inside and out.
  3. Stuff the cavity with lemon slices and herbs.
  4. Heat oil in a skillet over medium-high. Place fish skin-side down; cook 5–6 minutes until golden.
  5. Flip carefully and cook another 4–5 minutes.
  6. Rest for 2 minutes, then serve with lemon juice and sides.
