  • 4 cups fresh peaches (sliced)
  • 2 cups cherries (pitted, halved)
  • ½ cup sugar (adjust to taste)
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ¾ cup milk (whole preferred)
  • ½ cup butter (melted)
  • ½ tsp cinnamon (optional)
  • 1 tsp vanilla extract (optional)
  • 1 tsp lemon juice

Method
 

  1. Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
  2. Toss peaches and cherries with sugar, cinnamon, and lemon juice. Spread into prepared dish.
  3. In a bowl, whisk flour, baking powder, and salt. Add milk, melted butter, and vanilla. Stir until smooth.
  4. Pour batter evenly over the fruit. Don’t worry if fruit peeks through.
  5. Bake 35–40 minutes, until golden and bubbly.
  6. Let cool 10 minutes before serving. Serve warm with ice cream or whipped cream.

  • If using frozen fruit, thaw and drain well before baking.
  • For gluten-free: substitute almond or oat flour.
