Ingredients

Core Ingredients

  • 3 large very ripe bananas mashed
  • 2 large eggs room temperature
  • ½ cup unsalted butter melted and slightly cooled
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon pure vanilla extract

Optional Add-Ins

  • ½ cup chopped walnuts
  • ½ cup chocolate chips
  • 1 teaspoon cinnamon
  • 2 tablespoons Greek yogurt for extra moisture

Equipment

  • Bread Machine
  • Measuring cups & spoons
  • Mixing bowl (for mashing bananas)
  • Fork or potato masher
  • Toothpick (for doneness check)

Method

Prepare the Bread Pan
  1. Lightly grease the bread machine pan, especially around the paddle.
Add Wet Ingredients
  1. Pour in melted butter, eggs, mashed bananas, and vanilla extract. Spread evenly.
Add Dry Ingredients
  1. Layer flour, granulated sugar, brown sugar, baking soda, and salt on top.
  2. Do not mix manually.
Select the Correct Setting
  1. Choose:
  2. Cake Mode (preferred)
  3. OR
  4. Quick Bread Mode
  5. Avoid yeast-based cycles.
Monitor Initial Mixing
  1. Check after 5 minutes.
  2. If batter looks too dry → Add 1 tablespoon milk
  3. If too wet → Add 1 tablespoon flour
  4. Close lid and allow cycle to finish.
Check for Doneness
  1. Insert a toothpick when cycle ends.
  2. If it comes out clean, it’s done.
  3. If slightly wet, use “Bake Only” for 5–10 minutes.
Cool Before Slicing
  1. Let cool in pan 10 minutes before removing.
  2. Cool completely before slicing for best texture.

Notes

  • Use very ripe, brown-speckled bananas for maximum sweetness and moisture.
  • Do not overfill your bread machine pan (keep batter under ⅔ capacity).
  • Do not use a yeast setting — it will overwork the batter.
  • For a lighter version, replace half the butter with unsweetened applesauce.
  • Store wrapped at room temperature for up to 3 days, or freeze slices for up to 3 months.
