Prepare the Bread Pan
- Lightly grease the bread machine pan, especially around the paddle.
Add Wet Ingredients
- Pour in melted butter, eggs, mashed bananas, and vanilla extract. Spread evenly.
Add Dry Ingredients
- Layer flour, granulated sugar, brown sugar, baking soda, and salt on top.
- Do not mix manually.
Select the Correct Setting
- Choose:
- Cake Mode (preferred)
- OR
- Quick Bread Mode
- Avoid yeast-based cycles.
Monitor Initial Mixing
- Check after 5 minutes.
- If batter looks too dry → Add 1 tablespoon milk
- If too wet → Add 1 tablespoon flour
- Close lid and allow cycle to finish.
Check for Doneness
- Insert a toothpick when cycle ends.
- If it comes out clean, it’s done.
- If slightly wet, use “Bake Only” for 5–10 minutes.
Cool Before Slicing
- Let cool in pan 10 minutes before removing.
- Cool completely before slicing for best texture.
Notes
- Use very ripe, brown-speckled bananas for maximum sweetness and moisture.
- Do not overfill your bread machine pan (keep batter under ⅔ capacity).
- Do not use a yeast setting — it will overwork the batter.
- For a lighter version, replace half the butter with unsweetened applesauce.
- Store wrapped at room temperature for up to 3 days, or freeze slices for up to 3 months.
