Method
 

  1. Rinse the apple peels thoroughly to remove any dirt or residue.
  2. In a saucepan, bring 2 cups of water to a boil.
  3. Add the apple peels and cinnamon stick (if using).
  4. Reduce the heat and simmer for 10–15 minutes.
  5. Remove from heat and let steep for 5 minutes.
  6. Strain into mugs.
  7. Add lemon juice and honey (if desired) before serving warm.

Notes
